Pai Mu Tan
For white tea, only the new shoots and the first two leaves are picked and subsequently dried. This is what creates the extremely delicate, slightly sweet aroma. Covered in a silvery-white fuzz down, the leaves give this tea its name. A delicious rarity from the mountains of the Fujian province.
Preparation
Pour fresh, boiling water over one heaped teaspoon of tea for each cup.
Brewing time 5–7 minutes
Storage
